Japan is home to a myriad of sweet potatoes (known as satsumaimo) with many regions having their own varieties ranging in color (from orange to purple), sugar content, sweetness, textures and taste. 

 

Beni imo is a local, nutritious purple sweet potato found in Japan's southernmost tropical islands of Okinawa. Not to be confused with ube (which is actually a purple yam local to the Philippines), beni imo has a lighter purple skin and is sweet, smooth and creamy when cooked. Its powder can be found adding color and sweetness to many dishes ranging from appetizers, mains, sides and desserts!

 

Aragaki Guro Shoten was established in 1950 in Okinawa and for over 70 years has been promoting local delicacies that are part of Okinawa's traditional food culture.

 

Suggested uses: Similar in usage to Yomogi (Mugwort) Powder, use to add color and sweetness to desserts and other dishes. Try using when baking bread/cake/cookies/tarts, in buns/dumplings, mix in potato salad or with yogurt, ice cream and smoothies.
