This is Ippudo’s signature flavor, faithfully passed down from its founding to the present day. The broth is carefully refined to bring out the full richness and umami of pork bones, resulting in a silky, aromatic, and deeply flavorful soup. Paired with thin noodles in the traditional Hakata style, it offers a perfect harmony of texture and taste.

Bring 400 ml of water to a boil in a pot.
Add the noodles and boil for 15–20 seconds. Turn off the heat and add the soup base and flavor concentrate. Stir thoroughly.
Pour into a bowl. Top with red pickled ginger and pepper. Adjust toppings to taste.
