We use seven carefully selected vegetables that have been aged at low temperature for over a month. We use honey and apple vinegar to create a mellow, natural flavor. Momoya's "Bottled Fukujinzuke" is made by carefully aging seven carefully selected vegetables (radish, eggplant, cucumber, sword bean, lotus root, shiso, and ginger) at low temperature for over a month. By pickling them in honey and apple vinegar, we bring out the mellow sweetness and deep flavor of the vegetables, as well as a moderate chewiness. While many manufacturers produce red Fukujinzuke using synthetic coloring, Momoya uses only natural coloring, resulting in a natural color. It goes well with a wide range of dishes, including curry rice, fried rice, and yakisoba.
