"Sichuan Zha Cai" is made using the original Zha Cai production method (air drying, and bottling in a jar with over 10 kinds of spices for about a year), and is seasoned with sesame oil and soy sauce so that it can be easily used as a side dish or appetizer with rice, or as an ingredient in cooking. Momoya's "Momoya's Zha Cai 100g [Bottled]" is a flavorful seasoned Zha Cai made using premium Zha Cai, a specialty of Chongqing, China. The raw material, Zha Cai (the knob part of large mustard greens = green vegetable head), is first air-dried to bring out its unique texture and flavor, and then salted and fermented with lactic acid. After that, it is sprinkled with over 10 kinds of spices that are also used in Chinese medicine, packed tightly in a jar, and fermented and aged carefully for about a year. Zha Cai made using this traditional method is quickly stir-fried with sesame oil and soy sauce after adjusting the spiciness, and carefully finished with a deep flavor and unique crispness. Because it is bottled, it can be easily used in a variety of dishes, such as a side dish for rice, an appetizer, a topping for ramen or fried rice, or as a beer snack.
