Mullet Roe is seasonal, offered from winter months,

so it's usually associated with Lunar New Year, 

making it the most signature dish of Lunar New Year

The production of mullet roe takes place in

a duration of 10 months!

Only 3-4 years old mullets can produce

the delicious roes.

 

 

After carefully removing the

roe from mullet,

manufacturers season them with salt

and dehydrate them under sun

with intensive care.
