【Commitment to Noodles】
Since its founding in the 7th year of the Taisho era, noodles have been made using traditional methods (cutting fresh noodles and drying them like making somen).
The unique shape of the dried noodles during this process is patented as “Torishi掛け” by Torishi Store.
The ingredients used are high-quality wheat flour, salt, and delicious underground water from the Fukue area of Fukuoka.
Throughout the process, craftsmen adjust the temperature and humidity by observing the shape of the noodles and the weather, allowing the noodles to age and dry slowly for three days (approximately 60 hours).
Once the noodles are aged, the craftsmen remove them one by one from the drying racks, checking the drying level, and the noodles are finished with the original wheat aroma, flavor, and firmness.
【Commitment to Soup】
The base is made using only domestically sourced pork, boiling meat, spine, and ribs for 8 hours to remove the odor, then adding natural salt to create a rich yet light tonkotsu flavor.
