The production process is meticulous, using high-quality rice and malt as the main ingredients. It involves three main steps: soaking barley to sprout and make malt juice, fermenting cooked rice with the malt juice to create syrup, and finally shaping the syrup into small melon-shaped pieces. The sugar melon is known for its 65 small holes, giving it a crispy, chewy texture and a sweet, fragrant taste. Malt sugar melon is not only a traditional delicacy of Cao County but also a symbol of local culture and life. The Liu family insists on handmade production, preserving this ancient skill to prevent it from being lost in modern times.
