Our original blend dashi (soup stock) packet made with high-quality dried bonito flakes from Yaizu Shizuoka, dried sardine, kelp, and dried shiitake mushroom. Comes in convenient pyramid packets to make dashi, easy to use in Japanese and other dishes to add rich umami. How to make dashi soup stock – Place 1 unopened packet in 400ml (1 ¾ cups) of water in a saucepan, slowly bring it to a boil on medium heat, reduce the heat to low and simmer for 2 minutes. Remove a packet and you have flavorful stock ready to use. For richer stock, use 2 packets in 500ml (2 cups) of water.

 

Recommended usage includes: miso soup, noodle broth, simmered dish (Nimono), steamed custard (Chawanmushi), savory rolled omelet (Dashimaki Tamago), Japanese mixed rice (Takikomi Gohan)… anything that calls for Japanese traditional dashi.

 

You can also use it as seasoning – Tear packet and add dashi powder directly to your favorite dishes for a delightful boost of umami.

 

Perfect for: Japanese hamburger steak (Hambagu), savory pancake (Okonomiyaki), stir-fried rice and noodles, pasta, seafood, etc.

 

 

Homemade Miso Soup (2 servings)

 

Ingredients: 

- 1 packet TeaLife Original Umami Dashi Stock Powder

- 1 ¾ cups (400ml) Water

- 1 ½ Tbsp Miso

- Ingredients of your choice (Tofu, Wakame seaweed, green onion/scallion, root or/and leafy vegetables, mushrooms, etc.)

 

Instructions:

1. Make dashi soup stock.

2. Add your ingredients (except for green onions) and simmer till fully cooked.

3. Turn off the heat and add miso and stir to dissolve completely.

4. Add chopped green onions right before serving (to preserve fresh color and fragrance).

 

 

Savory Rolled Omelet (Dashimaki Tamago) (2 servings)

 

Ingredients:

- 8 Eggs

- 1 packet TeaLife Original Umami Dashi Stock Powder

- 200ml Water

- (A) 2 Tbsp Sugar, a pinch of Salt

- Neutral-flavored oil (vegetable, canola, etc.)

 

Instructions:

1. Make dashi soup stock and let it cool completely.

2. Put eggs, dashi, and (A) in a bowl and whisk to combine. 

3. Heat the tamagoyaki pan over medium-high heat, grease the bottom and sides of the pan with a paper towel soaked in oil. Wipe off excess oil.

4. Pour the egg mixture just enough to fill up the bottom of the pan. When it’s just set but not cooked through, roll the egg toward you with chopsticks. 

5. Move the omelet to the far edge and grease the uncovered bottom of the pan, pour the egg mixture, lift the rolled omelet and get the mixture under the omelet. When it’s just set, roll it toward you. Repeat with the remaining mixture.

6. After the last layer, shape the rolled egg by pushing against the edges of the pan.
