When spicy cod roe became popular nationwide as a Hakata souvenir, we started developing a new Hakata specialty that has a long shelf life and can be carried at room temperature, hoping to make mentaiko, which is a raw food, more people can enjoy it. In developing a new product using mentaiko, we focused on rice crackers, which have the three major elements of a popular souvenir: cheap, light, and delicious. In order to pursue both taste and appearance, Menbei does not use extracts or powders to bring out the umami of seafood, but instead kneads mentaiko, squid, and octopus directly into the dough as ingredients. However, rice crackers with ingredients kneaded into them are prone to breaking, and there was an issue that they were prone to cracking during the manufacturing process. If the mixture was changed to prevent them from breaking, the taste would be reduced. Therefore, we decided to prioritize taste and sell them as rice crackers that are ``okay to break,'' and in 2001, ``Menbei'' was born.
