Momoya's "Seasoned Zha Cai Value Pack 165g" is a bottled product made by fermenting and aging Zha Cai in a jar for about a year according to the traditional Sichuan method, seasoned with sesame oil and soy sauce. The raw material is the knob part of a type of mustard called Da Che Tsai, which is air-dried, salted, fermented with lactic acid, seasoned with 10 kinds of spices, and slowly aged. To finish, sesame oil and soy sauce are added to give it a rich and fragrant taste. It can be easily used as a side dish for rice, as an appetizer, or as an ingredient in stir-fries and salads.
