"Nine-stage" is a homophone for "high calcium" in Taiwanese, referring to the scientific name of the land-based blue-green algae, Organic Nostoc (Rain Mushroom), which contains 12 times more calcium than milk. Hence, it is named Nine-Stage Algae Noodles.
The noodles are crafted using traditional methods, made from high-gluten flour and pure mountain spring water, carefully blended to create a chewy and pleasant texture.
Moreover, the algae noodles are rich in dietary fiber, aiding digestion and absorption. They are nutritious and light, making them an ideal choice for healthy eating.
The noodles should be placed in boiling water in a fan shape to cook:
Boil for 4.5 minutes: The noodles are chewy and springy, perfect for those who enjoy a fuller texture.
Boil for 6 minutes: The noodles are softer and easier to chew, making them suitable for seniors and children.
Both cooking methods work well for soup noodles, cold noodles, or dry noodles.
