Highly recommended if you want to have better version noodle for Pho or Hu Tieu. The key is to soak it for 30mins before boiling. And boil it using medium high heat. Take it out when they are soft but still chewy, not too soft. Rinse it several times with cold water to wash away the boiling water.
Mix them gently with oil to avoid being sticky.
I served this noodle with Pho soup, or with Braised beef soup. Both is perfect.
