Tigaktae-gak is a dialect word for "tie-fighting," and the name is reminiscent of a tie-fight, as the crumbly, chewy texture is reminiscent of a tie-fight.
The secret to the crispy texture is that the dried crab is coated with glutinous rice paste, aged, and then deep-fried in corn oil.
