Chilean Seabass, also known as Patagonian Toothfish, is rich in fat and gelatin, tender and thick. This cheek meat (mouth meat) is the most delicious part of the whole fish. When the fish breathes, the gills will continue to close, so the meat on the mouth is particularly firm and elastic, and the more chewy and sweeter it becomes.
