Southeast Asia's Favorite - Pad Thai

Pad Thai Rice Noodles, lime wedges, and some chili or cayenne powder for decorations

Sauce: 1 1/2 tbsp tamarind puree, 3 tbsp brown sugar, 2 tbsp fish sauce, and 1 1/2 tbsp oyster sauce 

Toppings: 2-3 tbsp canola oil, 1/2 onion, 2 garlic, shrimps, 2 eggs, 1 1/2 cups of beansprouts, 1/2 cup of firm tofu, 1/4 cup of chives, and 1/4 cup of finely chopped peanut 

[ Steps ] 

1. Soak rice noodles with boiling water for 5 minutes then quickly rinse them with cold water

2. Mix all the seasonings 

3. Stir fry onions and garlic in a nonstick pan then add shrimps. Keep stirring until shrimps are fully cooked through

4. Add bean sprouts, tofus, noodles, then the sauce 

5. Mix everything gently until the sauce evenly coats the noodles, then finally add chives and chopped-up peanuts

6. Top it off with some lime wedges, cayenne pepper and more peanuts! 

 

Good Old Classic Italian Dish - Chicken Parmesan Spaghetti 

The bite into this dish is worth every minute of the wait~

Don't forget to give the chicken a generous coat of crust and cheese! 

[ What You Need ] Recipe From Taste of Home

1/2 cup seasoned bread crumbs, 1/2 cup grated Parmesan cheese, Italian spices like oregano or basil, salt, and pepper

1 egg, 4 pieces of chicken breasts, 2 tbsp butter, 2 cups spaghetti sauce, mozzarella cheese, and spaghetti 

[ Steps for Parmesan Chicken] 

1. Make the crumb mixture: Combine all spices listed above with bread crumbs and grated Parmesan

2. In another bowl, combine egg and water 

3. Dip chicken breast in the egg mixture first then move on to coating with crumbs 

4. On a hot skillet, cook both sides over medium heat for around 5-7 minutes 

5. Bring sauce to boil with some garlic salt and oregano then drizzle it onto the chicken 

6. Top the chicken off with some Parmesan cheese and it's ready to serve!

 

Beef Sukiyaki Udon 

Shabu Shabu at home within 20 min! 

Bring out the flavor of each ingredient by mixing in the right veggies

Udon noodles, 30g of onions (white part), 500ml dashi, 75ml soy sauce, 75ml mirin, 1 tbsp brown sugar

Carrots cut into a round shape, 2 shiitake mushrooms (trimmed), beef belly slices of your choice, firm tofu in thick slices, red pickled ginger (for garnish), and 2 eggs 

[ Steps ] 

1. Boil udon noodles for around 3-4 minutes (Some are microwavable as well)

2. Cut the white part of the onions diagonally to create big slices and fry them in the pan until golden brown then set aside 

3. Grab a heatable pot and add dashi, soy sauce, mirin, and brown sugar

4. Add carrots and boil the soup base (Don't forget to let it bubble for 2 minutes to burn off the alcohol in the mirin!)

5. Add all other ingredients (beef belly and veggies) and boil for another 3-4 minutes with a lid on

6. Top it off with some garnishes and crack an egg on top and it's ready to serve! 

 

Comforting Wonton Noodle Soup 

This heartwarming noodle soup is the comfort food you need to create for dad! 

[ What You Need ] Recipe From Made With Lau

Noodles, wontons, bok choy, 1 green onion, 8 peeled shrimps, 14 oz chicken broth, 4 cups water

1 tsp salt, 1 tbsp olive oil,1 tbsp fish sauce,1 tsp sesame oil, and some white pepper

[ Steps ] 

1. Thoroughly wash the Chinese bok choy and cut them into quarters along the stem 

2. Chop up green onions into small pieces

3. Cook noodles based on package instructions 

4. Add water along with the chicken broth to the pot then add olive oil and salt 

5. Add bok choy and let it cook for 2-3 minutes on high heat then add fish sauce, sesame oil, and white pepper 

6. Start the plating by adding the noodles as the base, then place your bok choy to the side, then place your cooked shrimp on top of the noodles 

7. Cook wontons in boiling water for 3-5 minutes until they start floating then transfer them to the top of your noodles 

8. Pour in the broth and it's ready to serve!! 

 

Vegan Soba Noodle Salad 

Last but not least, let's take a look at a refreshing summer recipe!

[ What You Need ] Recipe From Ahead Of Thyme

Some soba noodles, red cabbage, carrots, cucumber, fresh cilantro, sesame seeds, and creamy sesame garlic dressing

[ Steps ] 

1. Make the dressing: Mix peanut butter, soy sauce, black rice vinegar (or balsamic vinegar), garlic, and black pepper (Make sure to whisk everything well together to prevent lumping) 

2. Cook soba in boiling water accordingly to package instructions. Rinse with cold water and set aside 

3. In a large bowl, mix soba noodles with cabbage, carrot, cucumber, cilantro, sesame seeds, and the dressing

4. Toss the noodles gently to ensure everything is mixed well

Fancy Lobster Stir Fry (Yee Mien) 

Instantly bring your dad to a Chinese banquet with this dish!  

It might seem challenging at first but the process is a lot simpler than you think🦞

[ What You Need ] Recipe From Made With Lau

2 whole lobster, 2 yee mien (or Chinese noodles), 2oz ginger, 10 scallions, 4 cloves garlic

1 tbsp oyster sauce, 1 tbsp soy sauce, 1 tbsp sugar, 1/2 tbsp salt, some white pepper, 1 tbsp cooking wine, 1 and 1 tbsp corn starch

[ Steps ] 

1. Boil noodles for 2 minutes and set aside on a serving plate

2. Prep and cut scallion, garlic, and ginger into smaller pieces 

3. In a bowl, mix in the seasonings from above to create the sauce and set aside 

4. In a large wok (or pan) over high heat, add oil and let it heat up until it reaches around 350F (will take approximately 30 sec) 

5. Gently add your cooked lobster pieces to the oil by sliding them to the side of the wok to prevent splashing

6. Stir for 40-50 sec until lobster is cooked and set it aside with a strainer 

7. In the same wok, add your garlic, ginger, and scallion pieces and fry for around 50 sec then add your lobster 

8. Continue to fry for another 20 sec, add 1 tbsp of cooking wine, and pour 2.5 cups of boiling water and the sauce from step 3 

9. Allow the sauce to sit in for 40 sec and place a lid on top to cover the lobster then boil for another 30 sec 

10. While waiting for it to simmer, add corn starch to thicken the texture of the sauce

11. Finally, add the toppings of your choice to finish up the dish!
