Gokujo Uni is procured through Uni auctions, where a vast quantity of Uni is brought to the market each morning, with an average of 1,000 trays being sold daily. The Uni auctioneers then evaluate the Uni and assign grades, which typically fall into categories such as AAA, AA, A+, A, and regular.

Wholesalers then purchase the Uni from the auctioneers based on the auction price. The quality of the Uni may fluctuate due to various factors such as weather, season, and condition. If you request the auctioneers to provide the best quality Uni available on that day, they will typically purchase the AAA grade Uni for you.

What is Mutenka Uni?

AAA Uni is also referred to as "Mutenka Uni". Mutenka or 無添加 means organic Uni that is processed naturally with no chemicals. Most of the Uni we eat, regardless of where it comes from, is processed with alum (preservative) to maintain its shape and aid in preservation. Only AAA grade Uni can hold itself together without these additives (unless it is kept in saltwater) so you can enjoy the pure taste of Uni.  

How we choose your Uni

Every morning, our staff carefully evaluates the available trays of Uni to select the Uni that matches the exact specifications and quality of your order. Each Uni tray is carefully chosen by our Uni processor in Hokkaido and delivered directly to your doorstep in the U.S.

How to store Uni: Keep it chilled in the refrigerator, NOT the freezer. They are delivered fresh & chilled.

Pre-Order Note

Available for pre-order only. The estimated process time is usually about 7 - 10 days after you place your order. Once your order arrives from Japan, it usually takes 24 hours to process it for delivery. We ship the item via UPS Overnight, and deliveries are made from the first drop to early afternoon.
