This international award-winning red vinegar reproduces the taste of the Edo period in a delicious vinegar with a deep umami flavor and mild acidity. It's made exclusively from pure domestic junmai sake lees (also known as sakekasu), which is the fine paste that remains after the liquid has been removed to make sake. The sake lees has a complex flavor with a slightly fruity taste, providing a touch of sweetness to the natural sour taste of vinegar.

In particular, junmai (meaning "pure rice") sake is brewed using only rice, water, yeast, and koji (a traditional Japanese fermenting microorganism) — there are no other additives such as sugar or alcohol, which results in a cleaner, crisp taste. 
 

Established in 2008, Tajima Brewing was created in a closed elementary school with the vision of rebuilding the local community. They use natural methods to create their fermented products, using rice grown in harmony with the local environment.

Suggested uses:Use in place of vinegar in dressings or sauces. To make a salad dressing, mix 50ml of red vinegar with 2 tsp of sesame oil, 1 tbsp of soy sauce and ½ tbsp of citrus juice.
