Noodles and Craftsmanship

This product is made with a health-conscious approach, completely free from additives, colorants, and chemical seasonings.

【Commitment to Noodles】

The noodles are made using traditional methods from Taisho Year 7 (1918) (cutting fresh noodles and drying them like somen). This drying method and noodle shape are registered as a design trademark, known as the "Birdshi Kake."

The raw materials include high-quality wheat flour, salt, and delicious underground water from the local Fukuoka/Ukihara region.

The noodles are slowly matured and dried for 3 days (about 60 hours) by craftsmen, adjusting the temperature and humidity according to the noodle condition and weather.

After maturation, the noodles are removed from the drying racks, and the wheat’s original aroma, umami, and chewy texture are preserved.

【Commitment to Soup】

The soup uses carefully selected kabosu, a special fruit from Oita Prefecture in Kyushu. It has a mild sourness with a refreshing sweetness.

The natural fruit juice-based sauce made with kabosu from Oita, paired with colorless noodles made with domestic wheat flour, topped with various vegetables, creates an incredibly delicious dish.

It is very popular among women.
