I was a General Manager of a steakhouse in NYC for 5 yrs. Major letdown. The meat was incredibly gristly, making it difficult—and frankly unpleasant—to chew. I expected a tender, flavorful cut, but what I received was tough, sinewy, and full of inedible bits. It felt like little care was taken in trimming or selecting a quality piece. This really took away from the overall experience of the dish.

marbling is usually a hit or miss

Meat quality not good. When defrosted and opening the package the meat already smells sour. There’s a slimy film indicating that the meat has already gone bad.

Super good and tender in soup or stir fry. I added in my beef stew for extra protein and flavors

Looks good quality of meat, I'm satisfied with my purchase.
