Bugak (부각) is a traditional vegetarian Korean dish that was developed for the royal court as a way to preserve fresh ingredients past their peak season. Sliced vegetables are air dried, then coated in glutinous rice paste and dried again. This process is repeated and then fried in a HACCP certified facility.
This spicy hot pepper bugak is made by cutting fresh red peppers in half, pickling them in salt water, boiling them, rubbing them with glutinous rice paste, drying them in the sun, and finally deep-frying them. Every red pepper bugak goes through a 12-step process that ensures a crisp, spicy, and fragrant flavor. Salty, sweet, and spicy, it is the perfect snack, banchan (side dish), or chip for dipping.
