“People these days don’t know how yakgwa is made. The traditional recipe calls for flour, honey, sesame oil, and add rice wine to ferment, then deep-fry in 160~170 celsius. Yakgwa, traditionally, was a sweet dessert for special occasions. But nowadays, yakgwa is easily available and common. I wanted to special yakgwa to give back its glory. I experimented with many ingredients and loved mixing dried persimmon in the yakgwa dough. It made yakgwa more chewy, soft, and gave it a unique flavor. It’s been 15 years since I came up with this recipe. Sangju dried persimmon has a long history as well - it’s known for high quality and used to be offered to the Kings. Now with this special ingredient, my persimmon yakgwa became local favorites.”

“약과, 요즘 분들은 어떻게 만드는지 모르는 분들이 많을 거에요. 전통 방식으로는 밀가루에 꿀과 참기름, 청주를 섞어 발효해 160~170도의 기름에 튀겨 만들지요. 약과가 점점 흔해지고 평범해져 가는 것이 못내 아쉬워 실험 삼아 상주의 명품 곶감을 갈아서 넣고 반죽해봤어요. 그랬더니 식감은 마치 곶감처럼 쫄깃하고 부드러워지고 그 맛이 더 독특하고 아주 달콤해지더라고요! 벌써 15년이나 되었네요. 상주 곶감은 임금님에게 진상품을 올렸다고 기록될 정도로 최고 퀄리티의 제품인데요. 이젠 곶감약과가 상주의 명물이 되었어요. 이 작은 사이즈의 약과 안에 비타민 A와 C가 풍부한 최고의 곶감, 상주 곶감이 함께 있는 것이죠.”
Description
Yakgwa, honey cookie, is one of the most beloved Korean traditional desserts. It is typically enjoyed during the holidays or special occasions with family and friends gathering. Perhaps because it has been around for such a long time, nowadays, yakgwa has lost its value. Kim’C Market wondered if there was a special yakgwa producer and found Myeong Sil Dang’s persimmon honey cookie in Sangju, Kyeongbuk-Do.
Sangju is a mountainous region with a big daily temperature range, which is a perfect condition to make dried persimmon. The sweet dried persimmon from Sangju is mixed in to make yakwa. The persimmon not only gives a sweet flavor, but also gives a chewy and soft texture to yakgwa. What a great combination! And the sweet, clean flavor of this persimmon yakgwa will convert the first-timer and the older timer to ask for more of it!
