For the first time in the United States to buy fresh Hericium erinaceus. It is very fresh, the roots have been basically removed, and if you are afraid of bitterness, you can remove a little more, so that the soup will not be bitter. Although it's only 8 ounces, it's enough to make soup at one time. Hope to have it all year round.

Puffball aka lions mane. Product arrived tired (see photos) but i was able to use within a day of arrival and for cooking product was fine, taste was good. I will purchase again and cross fingers it is a little fresher but overall I am satisfied.

Wash it and tear it apart with your hands. It is delicious when you make soup or add some garlic ham and stir-fry it. After it is cooked, it still tastes very good, only the umami flavor without any abrupt taste.
