This all natural, non-GMO, slowly (5 -7 mos)fermented soy sauce is very fragrant and has complex flavors. It is very versatile, can be a base to make other sauces. I used it on chilled organic extra silken tofu with Bonito shavings and tender green onions as toppings. This sauce made the simple and humble dish come alive. The sauce accentuated the natural flavors of each ingredient. It is a bit sweet compared to the black salty sauce but it is a complex light sweetness that leaves a good aftertaste, totally different from the sweet teriyaki sauce which has load of sugar.
Try the premium grade vs the regular. The prices are not much different but it is made of better ingredients and a bottle should last a long time as a dipping sauce.
