I like to order this in bulk and keep them in my freezer. As a vegan with SIBO, many things hurt my stomach and many plant-based protein sources cause severe stomach pain. Beans, most brands of tofu, tempeh, and many vegan meats cause bloating and cramps and so I am always looking for creative new ways to incorporate protein into my diet.
I know this is mian jin, and in chinese cuisine it is usually braised and used in savory dishes in place of meat. However, I like to slice it up and use it as toast! Just chuck in the oven or toaster oven for a few minutes until it gets less wet and gets toasty-looking. Then, I like to top it with avocado, peanut butter and jam, or really anything you'd usually put on toast. Sometimes I'll also eat it plain. It tastes a lot like sourdough to me!
