Interesting concept to first grease the dough and then cut a hole once it bubbles up with heat and pour in egg mixture to make 蛋餅. Personally I feel it’s too much work and the egg pancake is kinda dry.

I love to use these as wraps! I add pork floss, an egg, hoisin sauce, Chinese sausage, and sesame oil!
