The flavor and texture of Nocolisi's Fine Foods bacon are excellent, perfect balance of salt and sugar, aromatic berkshire flavor with a subtle and pleasing hint of natural hickory smoke. I once asked Dad how to pick out good bacon, "The fat is solid milky white, firm, low moisture without being dried out," he answered. "You can't get good bacon at the supermarket these days anymore. They're all soggy and flimsy, tasting too chemical." I couldn't believe how delicious bacon can be until I took my first bite of Nicolisi's bacon. Wow! Now I understand what Dad meant; and why he missed and raved so much about the old fashioned dry cured bacon he grew up eating in the good old days. One 8-oz package contains 8-9 slices of bacon, almost as much bacon as in one pound of very wet soggy bacon which doesn't taste nearly as good.

Using the Shanghai style Twin Marquis dumpling wrappers, I made some breakfast dumplings! The bacon can be cooked thoroughly without crisping up if preferred, and it worked great for my scrambled eggs!
The taste is chewy and solid. If friends who want to lose weight want to eat different types of protein in the morning, this is a good choice
