Tender meat and great taste are my favorite, but the most important thing is to control the baking time, about 10 minutes is enough.
My first time trying this, but not the last! Beautiful sweet miso while still tasting the mackerel. I'm using these as part of my breakfast from now on!

The cod marinated in Miso was divine!!! I cooked it with king oyster mushrooms and bok choy was was not as overcooked as it looks! The color darkened because if the marinade since I seared everything in cast iron pan.

I baked it in a toaster oven with foil in it. It was plump and delicious. I can buy silver cod at Costco, but I can't get Saikyo miso. Kyokuyo is amazing, so I hope they offer more varieties of products. (They don't need to spend money on boxes and packaging.)
