It is difficult to find 100% buckwheat noodles on the market. It is a bit expensive, but... I boiled them (for 8 minutes) and added them to the leftover sauce from cold buckwheat konjac noodles, and it was good.

This is one of items that I always keep some in my pantry. Easy and quick to make. I normally boil, rinse in cold water, and serve with Menmi (dipping sauce), chopped green onions, wasabi and seaweed. When I have time, I make tempura too. Delicious!
