It was fresh and lovely. There was a little bit of scales on the flaps, which I removed, along with the fins and gills. I washed with vinegar and salt, seasoned then added to my soup. The salmon head made a fantastic fish soup. I enjoyed it very much. I’m definitely going to repurpose as needed.
