I use mirin with seafood or chicken. 1) You can remove the fishy smell by soaking thawed frozen shrimp in mirin. 2) I recently made crab stew and added a spoonful of mirin to the seasoning sauce. 3) If you soak chicken thighs in mirin after thawing, they grill up nicely golden brown. Please be careful when grilling over high heat, as they may burn if soaked in mirin.
