Let these Verde Valle beans soak overnight in a bowl of water, which will plump them up and decrease overall cooking time. Transfer the beans to a pot of water, and let them simmer for a couple more hours. As they cook, feel free to add garlic, bay leaves, oregano, or salt for some taste. Throw in some chili powder or cumin if you're feeling frisky. The result is dang delicious and creamy beans.
