So glad to find these low-sugar southern China Nian gao. Those who are Hokkien or Cantonese would know what these are. They are usually pan fried with a coating of egg. Nowadays I pan fry with egg and bread, like French toast but with a sticky Nian gao layer (see photo). The low-sugar is still sweet, can’t eat more than a slice per person.

When both sides are almost fried, stir with two egg whites and pour it on the rice cake, turn it upside down once. I thought it was a failure, but I didn't expect to make egg white rice cakes. Very tasty! Just didn't taste the coconut flavor.
