Tastes wonderful but roughly half of it is a thick fat. I had to trim the fat aggressively. I cooked it in sous vide and my friends loved it. If you don't mind trimming so much fat, go ahead and get it. I maybe repurchase if it's on a sale.
Remove some of the oil and it's enough for two people.

Place them in room temperature for 30 mins before cooking. Grease the cast iron skillet or the grill with avocado oil. Cook them until both sides are charred, approximately 1 min on each side. Sauce: 4 key lime juice/lemon juice (half a lemon), 1 teaspoon of black rice vinegar, 3 tablespoons of soy sauce, 1 tablespoon of sugar, 3 minced Thai chilis (optional), 4 cloves of garlic minced, 1/2 teaspoon of sesame oil, taste and adjust. You can garnish with finely chopped red onions and slices of cucumbers, cilantro and toasted sesames. This is good to paired with rice, cold noodles, or rice noodle salad.
