I prefer to soak the rice noodles in hot water because this type of rice noodle needs to be simmered for 10 minutes. Soak them in hot water for 15 minutes beforehand, then pour the soaked rice noodles into the cooked vegetable and meat broth and cook for three minutes before transferring them to a soup bowl for lunch!
