Katsuo no tataki (鰹のたたき), thinly sliced bonito that has been delicately grilled, is Kochi's most well-known dish. It is already has a salt or soy sauce marinade with vinegar, citrus, and garlic. 

Katsuo no tataki is a well-liked dish in izakaya and restaurants through Japan, and  it is the ideal small dish food to pare with Sake.

Instructions for Storage

All frozen products must be kept frozen at temperatures of 0° F (-18° C) or lower. Refrigerate fresh seafood in the coldest part of the refrigerator. Check that your home refrigerator is set to 40°F or lower. To preserve the best quality of fresh seafood, keep it in the refrigerator on ice. (Note: Higher storage temperatures cause fish to lose quality and deteriorate quickly.)

Instructions for Thawing

It is best to thaw frozen seafood overnight in the refrigerator. Other methods for thawing frozen seafood include immersing it in cold water for a short period of time in a sealed plastic bag or microwaving it on a defrost setting until the fish is pliable but still icy.
