American Wagyu beef looks very good
I was a General Manager of a steakhouse in NYC for 5 yrs. Major letdown. The meat was incredibly gristly, making it difficult—and frankly unpleasant—to chew. I expected a tender, flavorful cut, but what I received was tough, sinewy, and full of inedible bits. It felt like little care was taken in trimming or selecting a quality piece. This really took away from the overall experience of the dish.
I just got it delivered and I'm uploading it. It looks so good. I think it'll be delicious.
The cooling effect was good, so I was able to put it in the freezer as it was. It looks delicious. Thank you.

marbling is usually a hit or miss
The delivery was good. I received it last night and put it in the air fryer this morning. I put olive oil and onions in it and fried it. It was thin, so it cooked quickly, wasn't tough, and didn't smell.
The wagyu can sometimes be a miss because of lack of marbling. The kobe beef one on Weee is more consistent with marbling

I had it as yakiniku (grilled meat). It was difficult to slice it thinly, but it tasted just like Japanese yakiniku and was delicious!
