I used sesame oil with my Japanese carrot leaf dish using dashi and mirin. It came out great, but be sure to use only the carrot leaves, not the stems, as they can be hard to chew. Blanch them in hot water, add a little salt, and cook until tender. Remove and soak in cold water, then squeeze out the excess water. When seasoning with the sesame oil, dashi, and mirin, you can add a little sugar, it will improve the taste. Try it to your liking.
