The strip steak is a cut of beef steaks from the short loin of a cow. It consists of a muscle that does little work, the longissimus, making the meat particularly tender, although not as tender as the nearby psoas major or tenderloin.

The New York strip has intense flavor, with bold, beefy notes. It's not the most tender steak – one of the reasons people love it is for its great bite and solid chew. The rich marbling inherent in this steak creates the robust flavor and a delicious eating experience.

The great thing about having a flavorful cut of meat is that it doesn't require much seasoning! If you want to get the dish become  "fancy," you can flavor the oil the steak cooks in with ingredients like rosemary, garlic, or shallots, but you really don't need much more than salt and pepper to make a NY strip steak into a satisfying meal.
