• 1 Hamachi Kama (Yellowtail Collar)
• Salt and pepper to taste

• ¼ cup soy sauce
• 2 tablespoons Mirin (Japanese sweet rice wine)
• 2 tablespoons Sake
• 2 tablespoons fresh lemon juice
• 2 tablespoons fresh orange juice
