I was very happy with the buco I purchased from weee. It's very young and so good for buco salad.

This type, in my opinion, is called dry noodles in Saigon. I have been eating it since I was a child, but only now do I know how to blanch it. Do not blanch it in a pot of boiling water, it will be mushy.
