This type, in my opinion, is called dry noodles in Saigon. I have been eating it since I was a child, but only now do I know how to blanch it. You just need to pour boiling water into the noodles and mix well, then pour out the water and just pour in the broth to eat, it is very chewy and delicious. Do not blanch it in a pot of boiling water, it will be mushy.
