It's good; it's not too fatty overall, and the fat is evenly distributed.
After pressure cooking, I added white radish and continued cooking. The soup was fresh and delicious, with very little fat, just a thin layer. The beef broth was very flavorful, and the white radish was very sweet. Pure bliss.
