I drained the blood and made gamjatang. It was delicious because it didn't have any gamey smell or feel tough.
It's cold, so I made gamjatang. I soaked it in water for about four hours to remove the blood, so there's not much of a gamey smell.

Fresh meat
This was the first time I bought these pork neck bones. When I made soup, they had a fishy, foul smell. I don't know why. I soaked them in salt water for half an hour and blanched them, but they still had an unpleasant odor and no meaty aroma. I will never buy them again.

These ribs are so delicious! I especially love the lots of cartilage. Soak them in water with scallions, ginger, and cooking wine for 10 minutes. Heat oil, add rock sugar and stir-fry until fragrant. Add scallions, ginger, garlic, star anise, chili peppers, light soy sauce, dark soy sauce, and cooking wine. Add boiling water and simmer over low heat for 40 minutes. Finally, reduce the sauce over high heat for a few minutes. Super delicious! :)
