There's a lot of it. When I opened the bag, I noticed a slight smell, so I pre-boiled it. I used it in bamboo shoot rice and chicken and bamboo shoot stew, and it was delicious.

This smells really bad, like the bamboo shoots in snail rice noodles. If you don't like strong smells, don't buy it! It's too smelly for me, so I gave it to a friend in Guangxi.
Braised Pork with Bamboo Shoots (Taiwanese Style) When I was little, my mom would make this dish and I'd eat several bowls of rice with it. Now that I can make it myself, it's no different.
I like to boil out some of the salty/preserved 'flavor/smell' and then I cook it with pork belly or using bones from duck, salty chicken, etc. After thanksgiving I used the turkey bones and cooked it into the bamboo. These bamboo shoots are my favorite style.

Braised Bamboo Shoots with Leg Knuckle Leg Knuckle is the hind leg of a pig. My version doesn't look very attractive, but it's really delicious. Especially with the bamboo shoots, they absorb the fat from the leg knuckle, making it tender and smooth.
According to the instructions, it needs to be soaked for at least one hour, otherwise the salt content will be too high and very salty.
