I love Iberian pigs. After the stalls at the farmers market disappeared, I had to rely on weee. I have placed orders many times and tried different methods. Tastes wonderful but roughly half of it is a thick fat. I had to trim the fat aggressively. I cooked it in sous vide and my friends loved it. If you don't mind trimming so much fat, go ahead and get it. I maybe repurchase if it's on a sale.

Remove some of the oil and it's enough for two people.
