I like it. It's different than regular pancake. This had more chew, smelled earthy, and a little sweet. I only needed cold butter with each bite. Next batch I will try with coconut ice cream.

As for taste, not really much ube taste. However, tasted good with the yema spread I had on hand. I'm sure it would satisfy our ube craving if we had some ube halaya spread on top.

I wouldn't have known Ube pancake mix exists otherwise. I mixed water egg and a small amount of vinegar until the mix consistency is thick liquid but not lumpy and pan fried it and kind of had to adjust the heat from high heating up the oil to medium low to prevent it from burning. Flipping it was a bit messy but managed to make a whole pancake with a side of sliced hot dogs and saute onions. Thank you all immensely.
