The secret to deepening the flavor of curry lies in the combination of diverse spices.
For Uji Matcha Curry, we prioritized the unique flavor of the unusual spice “Uji Matcha,” while also focusing on enhancing the overall quality of the curry.
We blended multiple spices such as gentle-colored white pepper as the base, fenugreek, coriander, and cinnamon.
Repeatedly adjusting the overall balance
Strong-flavored beef and pork would spoil the matcha’s aroma, so we deliberately used mild chicken.
The ingredients include chicken, carrots, and potatoes cut into easy-to-eat sizes.
The harmony with the roux changes the flavor, resulting in a curry that won’t tire your palate until the last bite.
