I always use this rice koji to make amazake. It's twice the price on Amazon, so it's a big help!

Prepare the chickpea miso.
The only thing the supermarket sells is red miso, which I don't like, and it's expensive! (A small pack costs $15.) I bought koji and made white miso. I like my white miso sweeter, so I added a little more. Making it myself is cheap, you can make a lot, and best of all, it's delicious! I'm proud of myself!
This is amazing to improve flavor to meat and vegetables even soup stock. So happy I can’t wait to make a batch.
