Shiping Shredded Tofu is a signature soybean product from Shiping, Yunnan, renowned for its unique craftsmanship and texture. Here is the detailed introduction:
• Historical Origin: The production technique of Shiping Shredded Tofu has been inherited since the early Ming Dynasty. It became a royal tribute in the late Qing Dynasty, obtained the National Geographical Indication Protected Product Certification in 2013, and was highly recommended by A Bite of China Season 3.
• Production Craftsmanship: Adopting the unique "sour water curdling" method, it uses local ancient well water rich in calcium ions as a coagulant. Selected non-GMO soybeans from Northeast China's black soil are soaked in mountain spring water, ground at low temperature with stone mills, filtered and boiled three times, then naturally dried and dehydrated.
• Flavor & Texture: Golden yellow with a slight glossy sheen. When rehydrated, it is chewy, elastic and tender, boasting a rich soybean aroma that readily absorbs the flavors of soups and sauces.
