Chinese Noodlefish (Silverfish)

Ingredients: 400g silverfish, egg white, coriander, salt, monosodium glutamate, shredded green onion, cornstarch

Method:

 

Blanch the silverfish in boiling water, remove and rinse the fish scales with cold water.

Heat the wok, add clear soup, add silverfish, shredded green onion, salt, monosodium glutamate, bring to a boil, then thicken the soup slightly, add the egg white, remove any foam, transfer to a bowl, garnish with coriander leaves, drizzle with sesame oil, and serve.
